Catering portions guide

Count complete meals separately from appetizers. One lunch box is a meal; a mezze platter is a starter and should not be substituted for a full lunch simply because its serving range matches the headcount. For a shared meal, choose a main format first, then check what salad, sides, pita and sauces are already included.

Use published platter serving ranges and wrap platter piece counts for the actual dishes. The portion and serving-size guide explains why a starter portion is not the same as a complete meal.

Assemble a mixed-format order

Give each item a role: main meal, shared starter, additional side, dessert or drink. Put complete lunches against the number of people receiving them, then use the remaining headcount to plan shared dishes. Do not count the same guests twice because the order includes both boxes and platters.

Check overlap before increasing quantities

A package may already contain salad, rice, pita and dessert. Adding those items again can increase the subtotal without solving a missing-meal problem. Verify contents first, then decide which extra dish adds variety or serves a confirmed dietary need.

Keep a receiving checklist

At the agreed handoff, compare the order with the written list of boxes, packages and platters. Keep dietary meals identifiable and give the receiver the approved menu. Contact the catering team about any discrepancy rather than guessing which container belongs to which guest.
